Happy 2022! To celebrate the new year and the launch of our exciting Bliss Collection, we are sharing a healthy snack bar recipe inspired by the star ingredient of Bliss. Featuring spicy cardamom and crunchy almonds, these hearty snack bars will quickly become your new favourite.

What’s so special about cardamom?

There’s a lot to love about cardamom. It emits an inviting, warm scent and when used on the skin, it has been known to aid circulation and ease sore muscles. But what benefits does it offer when used in food? Here are a few reasons to add cardamom to your diet:

  • Cardamom is rich in antioxidants; these protect healthy cells from damage
  • It is known for its anti-inflammatory properties
  • Cardamom has been used to improve digestive health

Almond Cardamom Snack Bar Recipe

  • ⅓ cup honey
  • 1 teaspoon vanilla extract
  • ¼ cup almond flour or coconut flour
  • 1 tablespoon nut butter of choice (we like almond)
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cardamom or nutmeg
  • 1 ⅓ cup chopped almonds
  • ½ cup dried cranberries
  • ¾ cup chopped pepitas

Instructions:

Preheat your oven to 325°F. Line a 9-inch baking pan with parchment paper; use enough to cover the bottom and the sides.

In a large bowl, combine honey, vanilla extract, nut butter, almond flour, salt, cinnamon, and cardamom together and mix until smooth. Add in the almonds, cranberries, and pepitas and gently mix together until well combined.

Press the mixture firmly into your prepared baking pan over the parchment paper. Bake for 15-17 minutes.

Remove from the oven and allow to cool at room temperature for one hour, then cool in the fridge for an additional hour. Once it has chilled, remove the mixture from the fridge and cut it into bars.

We recommend keeping the bars stored in the fridge until you’re ready to eat one. They will keep in the fridge for up to two weeks. Enjoy!
